Micro-Roasting with the Aillio Bullet R2

At our roastery, we believe every batch of coffee should tell the story of its origin. That’s why we practice micro-roasting—a small-batch approach that allows us to carefully develop the flavor potential of each coffee bean. Unlike large-scale commercial roasting, micro-roasting is precise, intentional, and deeply personal.


Micro-roasting means working in small, controlled batches, often under 1–2 kilograms. This scale gives us the flexibility to experiment with roast profiles, highlight the unique characteristics of different farms, and adjust for freshness and seasonal changes. The goal is simple: to bring out the best expression of the coffee in your cup.

Why the Aillio Bullet R2?

Our roaster of choice is the Aillio Bullet R2, one of the most advanced electric drum roasters available. It’s designed for precision and consistency, with features like:


  • Infrared bean temperature sensors for accurate readings.
     
  • Induction heating for responsive and energy-efficient roasting.
     
  • Roast logging & profiling through Aillio RoastTime software, allowing us to replicate or refine each roast.
     
  • Batch flexibility from 100g test roasts up to 1kg production batches.
     

This technology empowers us to explore new flavor possibilities and ensure every roast meets specialty coffee standards.
